Author Eric Dregni Eric Dregni is an associate professor of English at Concordia University in St. Paul\, MN. Eric is also the author of several other books including Midwest Marvels\, In Cod We Trust- Living the Norwegian Dream and Never Trust a Thin Cook\, all published by he University of Minnesota Press. During the summer\, he is Dean of the Italian Concordia Language Village in Northern Minnesota.
