Eric is also the author of several other books including Midwest Marvels, In Cod We Trust- Living the Norwegian Dream and Never Trust a Thin Cook, all published by he University of Minnesota Press. During the summer, he is Dean of the Italian Concordia Language Village in Northern Minnesota.
